Peanut/Almond Butter Blondies

I make these often. Usually when I want something sweet and fast! Although, they are not even really sweet, they give you the feeling that you are eating a really yummy (illegal) baked good. No one would know. Moist and brownie like. Full of protein and kid tested! They whip up in a snap. You can use any “butter” you would like or that is legal on your diet. Peanut/Almond Butter is fine on SCD/GAPS if tolerated. Primal/Paleo can use Almond Butter. You may want to double the recipe and use an 11×9 baking dish if you are sharing these!

Peanut Butter Blondies

Cook time 20 minutes

  • 1/2 cup Blanched FINE almond flour
  • 2 tablespoons Coconut flour
  • 1 cup Peanut or Almond butter
  • 1/2 teaspoon Baking Soda


  • 1 Organic large egg
  • 2 tablespoons Butter (Melted)
  • 3 tablespoons Honey
  • 1 teaspoon Vanilla


Add all dry ingredients to a bowl and combine. Add wet ingredients.
When it is mixed well you will form your dough.
3. Place in a lined greased 8x8 baking dish and bake at 350 degrees for 15-20 minutes.
4. Let cool and cut in squares!

    These are delightful! I added 1/4 cup of toasted slivered almonds to the batter. Thank you for the recipe! I will make this again and again and again….
