Hamburger “Ghoulash”

What to do for dinner?? Sometimes that is the topic of question too often in SCD/Paleo households! Keeping some Grass fed or even Organic Beef in the freezer for nights like that, can be a lifesaver. This is a great “go to” meal to use up veggies that you have in the fridge, you really could add anything you would like!

This is a great “go to” meal that really, you could add any veggies to.

Ingredients

  • 1lb Organic Ground Beef (93/7 - 96/4 )
  • 1 Zucchini (Chopped in quarters)
  • 1 Bell pepper (Any color diced)
  • 1 Tomato (Diced)
  • 1 Onion (Diced)
  • 2 cloves Garlic (Minced)
  • 1 cup Campbell's tomato juice (Can substitute SCD legal can of tomato sauce 8oz)
  • pinch Salt & Pepper

This is a great “go to” meal that really, you could add any veggies to. I made this when I was trying to use things I had in my fridge before they spoiled.

The best part?…It is easy, only one pan needed. It’s fast and something the whole family loves.

Double the recipe if your family will be eating with you.

Directions

1. Cook your ground beef in a frying pan.
2. Chop all your veggies while beef is cooking.
3. When meat is cooked through, drain fat and add onion and garlic, saute for a minute.
4. Add tomato, bell pepper, and zucchini, saute for about 5 minutes.
5. When veggies are soft add the tomato sauce and salt/pepper. Mix and let cook another 5-10 minutes.
6. Serve and enjoy!
