Freezer to Slow Cooker Meals – Grain Free | Sugar Free | Dairy Free

What’s for dinner tonight?! The dreadful question. Here are some great ideas for fix it, freeze it and forget it!

I have been wanting to do this even before I started SCD. It is so genius. You shop once, chop once, mess the kitchen up once. Love it! It took me one hour to do all the prep and get it in the freezer. Of course at nap time!

One of these recipes is for the crock pot – save that one for days that are busier for you.

Of course, all are grain free, sugar free, dairy free, gluten free, and they are actually egg free too. Use all organic meat and veggies (I have a couple shortcuts for you).

For these meals, I considered 2 people only. For a family of 4, of course, just double it. One chicken breast per person or 8 oz of steak. Each recipe makes 2 bags/2 dinners.

The point is to save time, dishes, etc. Please review all recipes first and make an organized shopping list. These meals as well as, the meals on my Meal Plans, are designed to save money and not waste food.

Hawaiian Chicken

Serves 2
Prep time 15 minutes
Cook time 6 hours
Total time 6 hours, 15 minutes

Ingredients

  • 4 Organic boneless chicken breast (2 for each bag-double if you want)
  • 20oz Can Pineapple (1/2 for each bag- Juice and all)
  • 1 Purple onion (Chopped for each bag)
  • 6 Carrots (Chopped for each bag)
  • 3 tablespoons Tamari (Each bag - Coconut Aminos for Paleo)
  • 3 tablespoons Honey (Each bag)
  • 1/4 teaspoon Ground giner (Each bag)
  • 2 cloves Garlic (Minced each bag)

Note

*Tamari should be used in advanced SCD only.

Directions

1.
Get your two ziplocs open and ready. This is my way of saving dishes-You could always do this part in a bowl.

2. Pour the Tamari, honey, garlic, pineapple juice and ginger in each bag. Use your hands from outside of bag and squeeze together the sauce, the honey will thicken it like a Teriyaki.
3. Add 2 of the chicken breasts to each bag.
4. Place half of the onion, pineapples and carrots on top.
5. Let air out of bags and zip tight, lay flat and freeze.

To cook-take out of freezer and place in crock pot on low for 6-8 hours. Of course to make it without freezing first add everything to crockpot immediately. Place chicken in bottom, spices, then the tamari, honey and pineapple juice. Place veggies and pineapple on top, cover.

Chicken Stir Fry

Serves 4
Prep time 20 minutes
Cook time 30 minutes
Total time 50 minutes

Meal type Main Dish

Ingredients

  • 4 Organic boneless chicken breast (Cubed)
  • 1/4 cup Tamari
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic (Minced each bag)
  • 1/8 teaspoon Ground giner (Each bag)
  • 1 pinch Pepper (Each bag)
  • A mix of stir fry veggies-use what your kids and your family likes(fresh or frozen) (Snap peas, onion, (bell peppers-take a handful of these from the fajita recipe below), broccoli, zucchini squash, mushrooms, carrots(I cheated here and bought an organic stir fry kit from Whole Foods))

Optional

  • 1 teaspoon Cayenne or Red pepper flakes (Each bag)

Note

Tamari is SCD legal. It is real Soy sauce made with Soy and not Wheat. The Soy has been fermented and because of that, it is legal. MUST be advanced SCD and try it in moderation first.

Directions

1.
Chop all veggies.

2. Cut up the chicken up in small chunks-season with pepper. If you are using the cayenne or pepper flakes, sprinkle it on chicken.
3. Add the chicken to the bags and put the Tamari, olive oil, ginger and garlic in.
4. Add all veggies on top and swish bag around to get the sauce on all of it.

Let air out of bags and zip tight, lay flat and freeze.

6. To cook, take out of freezer and place in a wok or large frying pan over medium heat. Cook until meat is cooked and veggies tender.

Steak Fajitas

Serves 4
Prep time 20 minutes
Cook time 30 minutes
Total time 50 minutes

Ingredients

  • 4lb Organic Skirt, flank or sirloin steak (Cut against grain in strips )
  • 6 Bell peppers (Mixed colors)
  • 1 Onion
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Cayenne
  • 2 pinches Salt & Pepper

Note

Serve with Tortillas or wrapped in lettuce!

Directions

1.
Cut up your veggies, place half in each bag

2. Slice steak against the grain in thin fajita style strips.
3. Season steak with the cumin, cayenne, salt and pepper.
4. Place in bag on top of veggies.
5.
Let air out of bags and zip tight, lay flat and freeze.

6. To cook, take out of freezer and grill in foil or in frying pan, until steak is done.
